Katherine Mary Hay Carlson, 72 of Jefferson, Texas, passed away on February 24, 2021 after a lengthy illness. Cremation arrangements are being performed under the direction of Haggard Funeral Home. A small family service will be held at a later date.
Katherine was born January 22, 1949 in Overton, Texas to Mack Hay and Edythe Hawkins Hay. Her mother later was remarried to J.H. “Jack” Jackson who raised Katherine and her brother Carter Lee Jackson. She married Robert Brock in Mexico in 1965 and had two children, Daniel and Kelly. She later married Joseph C. “J.C.” Carlson in 1986. She and J.C. enjoyed many activities together over the years including gardening and yard work, traveling, fishing, and nature watching.
Katherine loved to travel and lived in many areas throughout her life including Puerto Rico as a teenager, Louisiana, Georgia, Ohio and New York City. She returned to her native Texas in the 1980’s and lived in Jefferson, Texas from 1995 until her death.
Katherine had many hobbies and interests and loved learning new skills. She loved to cook, became a pastry chef and owned a bakery in Deer Park, Texas in the early 1990’s. She earned a degree in Hotel Management. She also enjoyed gardening so much she became a Master Gardener. She loved animals and at various times owned dogs, goats, and miniature Scottish Highland cows. She was a member of The Church of Jesus Christ of Latter Day Saints.
Katherine is survived by her husband J.C. Carlson of Jefferson TX; her son Daniel Brock and wife Kim of Stephenville, TX; her daughter Kelly Elskes of Houston, TX; granddaughter Danja Elskes and husband Caroll Guillory of Houston, TX; granddaughter Lacretia Kilgore and husband Jason of Abilene, TX; granddaughter Katrina Walden and husband Ben of Toledo, OH; grandson Will Brock of Stephenville, TX; great-granddaughters Trinity, Mackenzie, Autumn and Natalie; great-grandsons Henry and Calvin; and her very special friend Cammy Snyder of Smithville, Texas.
